Over the past few days, temperatures have been rising, sometimes reaching close to 40°C in some parts of France. So there is no question of turning on the oven or simmering vegetables on the stove. We choose recipes without cooking. On the menu: a starter, a main course and a dessert perfect for dealing with high temperatures.
Heat wave alarm! A new heat wave is expected throughout France. Temperatures will rise again and even exceed 39°C in some parts of the territory. In this situation, it is better to turn away from the oven and recipes that require cooking time. Make room for refreshing dishes and desserts and thirst quenching. Salads, gazpachos, fruits, vegetables and frozen desserts will be your best allies to face the heat.
What to drink when it’s hot? Did you know: drinking too cold speeds up dehydration of the body. The solution: choose a hot or warm drink, such as a tea or an infusion for example. The latter makes it possible to expand the vessels and to evacuate the heat more easily. So no more glasses of iced water and soft drinks with ice cubes! Also prefers water at room temperature to water stored in the refrigerator. You will quickly feel the difference.
As a starter: Makis with express cucumber
For 6 maki
1 small steak of raw salmon (or 4 slices of smoked salmon)
4 tablespoons spread cheese spread
1 organic lemon
Use a vegetable peeler or a mandolin to cut the cucumber slices vertically.
Arrange them lengthwise and overlap to form the base that you can roll up later. Blot them with a paper towel to absorb excess water.
Distribute fresh cheese (Philadephia or St-Moret according to your wishes). Then peel the lemon over the cream cheese. Add thin slices of raw salmon. Sprinkle with golden sesame seeds and add pieces of avocado (finely sliced).
Roll tight. Finally cut to obtain ‘makis’.
As a main course: Melon salad, feta, ham
1 small melon
4 slices of raw ham
80 g of feta
For the sauce:
3 tablespoons lemon juice
3 tablespoons of olive oil
1 tsp thyme
Salt and pepper
Peel the melon and cut the flesh into small cubes.
Cut the ham slices into thin strips and cut the feta into cubes.
For the sauce: Pour the lemon juice into a bowl, salt, pepper and mix. Add the olive oil, mix vigorously to obtain a nice emulsion and add the thyme.
Place lettuce, melon, ham, feta and sauce in a salad bowl and stir just before serving.
For dessert: Frozen yogurt with seasonal fruits
For 1 person
1 plain yogurt
1 teaspoon powdered sugar
10 cl cold milk
Fruit of your choice (raspberry, melon, peach, apricot)
1 hour (minimum) before cooking, place the yoghurt in the freezer.
When the yogurt is well frozen, pour all the ingredients (except the milk) into a bowl and mix.
Add milk gradually until you get the consistency you want (more or less runny).
Then all that’s left is to add on top the topping of your choice. (e.g. fruit, chocolate, caramel, whipped cream, candy, cereal, etc.).
