Croque with goat cheese and rocket pesto

Ingredients:

  • 12 slices of wholemeal bread
  • 1 log of goat cheese
  • 20 g soft butter
  • For arugula pesto:
  • 200 g arugula
  • 50 g grated parmesan
  • 50 g pine nuts
  • 1 clove of garlic
  • 15 cl olive oil
  • Salt pepper

Preparation:

Peel the garlic.

Put the garlic, half of the arugula, the parmesan, the pine nuts, salt and pepper in the bowl of a blender. Mix, incorporating oil gradually until you obtain a slightly grainy paste.

Cut the goat cheese log into 12 thin slices.

Generously spread 6 slices of sandwich bread with the arugula pesto, arrange 2 slices of goat cheese on top, garnish with a small handful of arugula and close with another slice of sandwich bread. Spread with a little butter.

Brown in a sandwich maker or in the oven at 200°.

When ready to serve, cut the croque-monsieur in half diagonally and serve with arugula.

Croque with mushrooms, onion, cheddar and ham

Ingredients:

  • 12 slices of wholemeal bread
  • 6 thin slices of raw ham
  • 1 tablespoon powdered sugar
  • 250 g button mushrooms
  • 2 sweet onions
  • 6 slices of cheddar cheese
  • 40 g butter + 20 g for the sandwich bread
  • Salt and pepper

Preparation:

Scrub and cut the mushrooms into strips. Melt half of the butter in a frying pan and quickly brown the mushrooms over high heat. Season with salt and pepper at the end of cooking, then set aside.

Peel and finely chop the onions. Melt the rest of the butter in the same frying pan and fry the onions with the sugar on a low heat without browning.

Arrange 6 slices of bread on the table top, garnish in order with onion, 1 slice of cheddar and 1 slice of ham. Close with another slice of wholemeal bread. Spread with a little butter.

Brown in a sandwich maker or in the oven at 200°.

Cut the croque-monsieur in half diagonally when serving.
