Milk chocolate, dark chocolate or white chocolate, it’s super easy and super tasty. All you have to do is follow this simple preparation, and if you don’t have an electric mixer, you just need one more ingredient: elbow grease to whip the egg whites stiff!

Recipe Traditional chocolate mousse


  • 200 g dark dessert chocolate
  • 40 g of butter
  • 60 to 100 g of sugar (depending on your preferences)
  • 4 whole eggs
  • 2 egg whites
  • 1 pinch of salt



Break the chocolate into small pieces and melt it in a bain-marie with the butter. Stir regularly to get a smooth and shiny melted chocolate. Remove from heat source.


Separate the yolks from the egg whites.


Add the egg yolks and half the sugar to the cooled melted chocolate and mix quickly.


Beat the six egg whites with a pinch of salt with an electric whisk (or manual whisk). When they start to become firm, sprinkle while you continue to whip with the rest of the sugar.


Add two tablespoons of beaten egg whites to the chocolate mixture and mix quickly. Carefully add the rest of the egg whites and mix with a spatula, lifting upwards so as not to “break” the foam.


Pour into a serving dish or individual bowls and refrigerate the chocolate mousse for at least 1 hour to set.


Sprinkle chocolate shavings on top before tasting, for example!
