How to prepare a rustic pie for a successful dessert?
Before you prepare this gourmet dessert, here are the ingredients you will need. For the filling, you need 60 g of sugar, 250 g of strawberries, 100 g of apples (diced), 250 g of rhubarb and 18 cl of water. And for the dough270 g butter, 450 g flour, 30 g sugar and 1.5 pinches of salt.
Here’s a detail you need to know before heading to the oven! You may be tempted to fill the pie with apples. But be aware that with this type of dessert, less is more ! In fact, this fruit releases a lot of juice, which can escape from the pie and dirty the crust and your oven.
Start by making the dough. Combine flour, salt and sugar in a food processor fitted with a steel blade. Pulse everything briefly to mix well, then add pieces of cold butter. However, this should not exceed 20 seconds!
Knead several times until the dough becomes a firm ball. Dress it afterwards so that it forms a disk. And put it in the fridge afterwards. To prepare the filling, peel, core and cut the apples and strawberries. Put them in a large bowl afterwards. Add sugar, vanilla, cinnamon, melted butter and salt.

Sprinkle 1 tbsp turbinado sugar on top crust and 1 tbsp on fruit. Then put the assembled pie in the fridge for 15-20 minutes while you preheat the oven. Then cook it for 55 to 65 minutes. Transfer the tin to a wire rack and leave to cool. While the pie is cooling, prepare the optional frosting.
Mix the apricot jam with 1-1/2 teaspoons of water in a small bowl. Heat in the microwave until the mixture bubbles. Then use a pastry brush to brush the fruit with the resulting syrup! This dessert is not far from our last preparation. So this is a revised version! The ingredients remain the same. Start by washing and peeling the rhubarb. After you cut it by 2 cm, mix it with sugar and let it drain in a colander for 30 minutes!
In a medium bowl, combine sugar, salt and flour. Pour in water and knead the butter! Then place half of the strawberries followed by the rhubarb on the rolled out dough. Fold the edges to prevent the topping from spreading during cooking! All you have to do is bake your pie at 180°C for 35 minutes. Sprinkle everything with icing sugar and your dessert is ready to serve!
