The recipe for “tower croque-monsieur” by Diego Alary

-8 slices of white bread (thick if possible)
-70 g cream cheese for spreading
-250 g grated Emmentaler cheese
-4 slices of white ham
– 60 g of butter

1. Preheat the oven to 190°C.
2. Spread each slice of bread with fromage frais on one side and all the way to the edges.
3. Place 1 handful of grated cheese on the 8 slices of bread. Then, on only 4 slices, place 1 slice of ham folded in the middle.
4. Then close with another slice of bread. Fry them in a frying pan, with a little butter, on both sides, until they have a nice colour. Once they are pan-fried, place them on a baking sheet and bake for 5 minutes to melt the cheese. Finally, stack them for the croque-monsieur tower.
