Liège hot pot
Ingredients for 4 people): 1 kg potatoes, 1 kg green beans, 600 g smoked bacon, 2 large onions, 100 ml raspberry vinegar, butter, salt, pepper.
Preparation: Clean the beans and cook them in salted boiling water. Wash the potatoes and boil them in salted water. Cut them into quarters after cooking. Cut the bacon into cubes and brown them in a pan with a little butter. To reserve.
Chop the onions and fry them with a knob of butter. Mix potatoes, beans, bacon and onion. Deglaze the bacon pan with vinegar and pour it hot.
Mix, reheat for two minutes and serve.
Japanese potato salad
Ingredients for 4 people): 1 nice slice of cooked ham, 1 medium carrot, 600 g tender potatoes, 70 g cucumber, 70 g red or yellow onion, 5 tbsp. on p. mayonnaise, 1 tbsp. on p. cider vinegar, salt and pepper.
: Thinly slice the onion and sprinkle liberally with salt to loosen it. Let it stand for a few minutes and carefully drain off the water. Do the same with the cucumber cut into thin half slices. To reserve.
Peel the potatoes and boil them in salted water. Drain and mash them coarsely with a fork in a dish. Let cool. Cut the carrot into small pieces and boil them for five minutes in salted boiling water. Let cool.
Add the carrot pieces, the onion and cucumber slices and the ham in small pieces to the potatoes. Add mayonnaise and vinegar and adjust the seasoning if necessary. Book cool.
Serve the salad dressed with an ice cream scoop and accompanied by a few lettuce leaves.
For a vegetarian recipe, you can omit the ham or replace it with shrimp or a hard-boiled egg for a protein boost.
Using Japanese mayonnaise (kewpie) and rice vinegar instead of cider vinegar will definitely give the salad a more authentic side, but our local ingredients do the trick perfectly.
