To help parents get stubborn children to eat vegetables, there is a little trick: always mix them with potatoes. You can therefore boil the potatoes in water and mash them with broccoli – make sure it is not too green. Another option is hash browns, which are crispy on the outside and soft on the inside. This can be done with celery, broccoli, carrots or sweet potato.
Follow these instructions to make your Potato and Celery Pancake a success:
– Boil three potatoes in water, then mash them with butter (or olive oil) and a little parmesan or cream cheese.
– Mix it all with ¼ grated celery in a bowl and three slices of bacon cut into thin sticks and fried in a pan. If you want it crispy, add a little flour. Shape into balls.
– In a frying pan pour a splash of olive oil and then a dollop of butter. When the butter foams, add the vegetable mixture.
– Let cook until the ball turns brown, then turn it over on a plate. When the sides are brown, add more butter and lower the heat to cook the inside.
